A late afternoon flight arrival into Hobart, a private car will transfer you from Hobart Airport to the Islington Hotel.
The 11-room Islington Hotel is a few minutes from the city center, with views of Mount Wellington. This historic urban lodge with an eclectic collection of art and antiques, including Picasso sketches, Khmer statues, Persian rugs, and Japanese lacquer furniture. The two-story glass conservatory is a standout and houses the main dining area, serving bespoke menus.
For dinner enjoy a beautiful four course degustation menu that is served in the Islington’s mountain view conservatory. The menu is designed with an emphasis on seasonal, local and organic Tasmanian produce from small producers, or the hotels garden where possible.

Salamanca Place and Port Arthur
After breakfast a private transfer will take you into Hobart. Start your morning with a stroll along Hobart’s pretty working waterfront toward Salamanca Place, where rows of Georgian sandstone warehouses have been converted into galleries, theatres, restaurants and cutting-edge boutiques. On Saturday mornings you can wander around more than 300 stalls at the Salamanca Market (8.30am-3pm) for fresh local produce, handmade arts and crafts and antiques.
A private transfer will collect you from the Islington Hotel at 2pm and transfer you to Port Arthur (approx. 90min)

A luxurious day of wine and art at Mona
After breakfast a private transfer will take you to the pier to meet the MONA ferry departing at 9.30am
Kick off your Moorilla Experience by sailing from Hobart to Mona on their high-speed ferry. You’ll be travelling in style in the ferry’s Posh Pit, which includes complimentary Moorilla wine, Moo Brew beer, canapés and a private deck. Arriving at Mona, begin your self-guided exploration of the subterranean galleries with an introduction to Mona’s “O” device by a gallery attendant. At 11.30am, Moorilla’s Wine Ambassador – a bone fide expert in all things wine – will take you on a private, behind-the-scenes tour of the Moorilla winery and vineyard.
At 2pm, indulge in a delicious two-course lunch of seasonal local produce, with matched wines from Moorilla’s Cloth Label and Muse Series. The rest of the afternoon is yours to see the rest of the museum before heading back to Hobart on the ferry at 5pm. Your driver will meet you upon arrival and take you back to the Islington Hotel.

Bruny Island
After breakfast your private guide and car will collect you from the Islington Hotel and take you south to Kettering, here you will take the car ferry to Bruny Island.
First stop for the day is “Get Shucked Oysters” where you have the opportunity to taste some of the freshest and best oysters in Tasmania. Bruny Island Cheese Company is the next stop, here you can sit and enjoy a cheese tasting, have a coffee or sample their beer. Then it is onto Bruny Island Honey, they have been collecting honey from their 400 hives on the island for over 20 years. Next stop is Bruny Island Premium Wines for lunch and the opportunity to try their wines and ciders. First stop after lunch is Bruny Island Chocolate Company where you can purchase some of their famous Bruny Island Fudge.
Last stop before the ferry is Bruny Island House of Whisky who make their own delicious Single Malt Whisky, Trappers Hut and also provide tastings and sales for over 110 of Tasmania’s best whiskies. Returning back to Hobart in the late afternoon.

Goodbye Hobart, Hello Saffire
After breakfast and check-out, a private car will transfer you to Hobart City where you will meet your seaplane transfer to Saffire Freycinet. After a 30 minute scenic flight with magnificent views over Wineglass Bay you will arrive at Saffire Freycinet which will be your home for the next 3 nights.
Check in & enjoy lunch in The Lounge known for its fresh local produce on the barbeque.
Spend the afternoon with a guide on an easy 2 hour-walk which combines two of the popular shorter walks of Freycinet Peninsula – Cape Tourville and Sleepy Bay.
Pre-dinner drinks and evening canapes are served in The Lounge. Then move to Palate for their famous degustation dining.

Schouten Island and oysters
After breakfast make you way to the foyer to meet your boat captain
Enjoy close-up interactions with soaring sea birds, playful marine mammals and a diversity of life on your way to Schouten Island aboard Saffire’s purpose-built vessel, Saffire. The adventure also includes a visit to culturally significant sites of past and present inhabitants, including the Australian fur seal. Morning tea is included and prepared by the team of chefs at Saffire. Return back to Saffire for lunch.
In the afternoon meet your guide in the foyer for a visit to a working oyster farm. Learn all about the wetlands and marine ecology, plus taste the prized oysters.

Overnight Saffire Freycinet
Bees and Bikes
After breakfast meet your guide in the foyer, helmets on and board your quad bike. Your guide will take you along four-wheel drive tracks through coastal heathland to sandy white beaches in the Freycinet National Park.
Lunch is served back at Saffire
After lunch learn the secrets behind the sweetness of the Saffire honey. Don a full-body apiarist suit and venture into an onsite Saffire apiary, with hives overlooking the Hazards mountains. Learn all about the history off the bees as you extract honeycomb to witness the breathtaking natural phenomenon of honey making by Tasmanian bees.
Free time in the afternoon to either experience the spa, try the water sports or read a book in a hammock

Going home
After a leisurely breakfast transfer to your seaplane for your scenic transfer to Hobart airport. Saffire Airport lounge is the perfect spot to freshen up, have a refreshment or use the complimentary wifi prior to your domestic flight.
